Happy New Year everyone! We often get asked for recipes for Monkey Butter, so here are some of our favorites…

Monkey Butter Bars

1 cup Honey, Dark Chocolate Cherry or Dark Chocolate Banana, or Coconut Monkey Butter
1 tbsp. minced fresh ginger
2 tbsp. sesame seeds
1 cup raisins
2 tbsp. honey (omit if using Honey Monkey Butter)

Grind ginger, sesame seeds, and raisins until fairly fine. Add Monkey Butter and honey and continue to process until well mixed. Press into a square about ¾ inch thick on a plate and refrigerate for an hour or more. Cut into 2 inch squares.

Indonesian Peanut Sauce – tasty glaze for chicken, fish or tofu

1/4 cup Maple Bacon or Honey Monkey Butter
1 tbsp. tamari (soy sauce)
1 tbsp. lime juice
1 tbsp. water
Hot sauce to taste
Optional: add cilantro or mint, chopped

Whisk altogether. Makes 1/3 cup. May be added to sautéed veggies. Tasty glaze for fish, chicken or tofu.
Or spread on tortilla, top with lettuce leaf, shredded chicken breast, grated carrot and avocado. Roll up.

Spicy Monkey Butter

Mix 2 tbsp. Dark Chocolate Cherry or Honey Monkey Butter with 1 1/2 tsp tamari (soy sauce) and hot sauce to taste.
Serve on cracker, carrot, or celery.

Monkey Butter Treats

1 apple, sliced 1/2 inch thick
4 tbsp. Monkey Butter (your choice!)
Cinnamon to taste
1/4 cup granola

Spread one side of sliced apple with Monkey Butter and sprinkle with cinnamon. Dip the apple slices into granola to cover the Monkey Butter. Delicious on sweet, tart or tangy apples!

Monkey Butter Apple Sundaes

2 apples, chopped into 1/4 inch pieces
2 tbsp. Monkey Butter (your choice)
1/4 cup maple syrup
2 tbsp. chopped peanuts
2 tbsp. grated coconut

Blend the Monkey Butter and with the maple syrup until smooth. It should be the consistency of caramel sauce.
Divide the apples into two dessert bowls, drizzle with the sauce and top with peanuts and coconut. This sauce is also delicious on fresh pears.

Monkey Butter Shake

1 cup low fat milk
1 tbsp. Dark Chocolate Banana or Honey Monkey Butter
1 small banana
2 – 3 ice cubes
2 tsp. honey (or less)

Blend until smooth.
